1 tbsp olive oil
2 cloves garlic, finely chopped
2 tsp smoked paprika
300g passata tomato
1 tbsp tomato puree
60ml vegetable stock
300g haricot beans

optional:
handful of spinach, 1 spring onion, handful parsley, avocado and squeeze of lemon

method

heat the oil in a sauce pan over a medium heat
add the garlic and allow to sizzle but be careful not to burn
reduce heat to low, add the smoked paprika and stir
add the passata, puree and stock and then simmer for around 20 mins
add the beans and simmer for a further 10 mins
add spinach if using right at the end, stir for 2 minutes
if using avocado, mash into to desired consistency, (like a guacamole) and add a squeeze of lemon
serve with guacamole, or put on toast
season to taste, sprinkle with parsley and spring onions (chopped)
